􀀒􀀗Cibi etnici: tendenze, sviluppi e le certificazioni Halal e Kasher

The following thesis aims to understand and contextualize the food consumption in a globalized, multi-ethnic and multi-religious society. The following work also aims to provide an overall view about the Halal certification and Kasher ones (i.e. Muslim certifications and Jewish certifications) and their target market. Then, the work begins, analyzing the phenomenon of globalization and the trends of consumption, trying to identify these prospects under the relationship between food, culture and identity. Later we proceed observing migratory flows that are part of the complex process of globalization, and then focused on the analysis of the market of ethnic foods, that is particularly expanding in Europe. The thesis follows with a study of Halal and Kosher certifications, also trying to understand the critical issues and the future opportunities in the European market and Italian one

La seguente tesi ha lo scopo di comprendere e contestualizzare i consumi alimentari, in una società oramai Globalizzata, multietnica e multi religiosa. Il seguente lavoro, inoltre, ha lo scopo di fornire uno sguardo di insieme circa le certificazioni Halal e Kasher (ovvero le certificazioni musulmane ed ebraiche) ed al loro mercato di riferimento. Il lavoro inizia quindi, analizzando il fenomeno della globalizzazione e le tendenze ai consumi, cercando di individuare sotto queste prospettive il rapporto che esiste tra cibo, cultura ed identità. In seguito si procede osservando i flussi migratori che fanno parte del complesso dei processi di globalizzazione, per poi concentrarsi sull'analisi sul mercato dei cibi etnici, mercato che negli ultimi anni si sta particolarmente espandendo in Europa. La tesi segue con uno studio delle certificazioni Halal e Kasher, cercando anche di comprenderne le criticità e le opportunità future nel mercato Europeo ed Italiano.
