В контексте глобализации, изменения климата и роста численности населения во всем мире, Eвропейские страны как никогда сконцентрированы на создании более устойчивых пищевых продуктов. На повестке дня стоит вопрос о сокращении масштабов животноводства и поиске альтернативного источника пищи с количеством протеинов не уступающим животному. Среди видов альтернативных источников протеина особо выделяют съедобные насекомые. По словам ученых, богатые протеином съедобные насекомые потенциально могут стать новым видом пищи для человечества. Исторически съедобные насекомые были традиционной пищей в ряде стран. Однако внедрение энтомофагии «на Западе», где насекомые никогда не рассматривались в качестве пищи – является сложной задачей. Люди в западных странах сталкиваются с рядом социально-культурных и психологических проблем, связанных с насекомыми. В последнее время, с появлением потребности в альтернативных источниках пищи, энтомофагией заинтересовалось больше исследователей. Они проводят исследования и дегустационные сессии, чтобы понять поведение потребителей и найти подходящие методы, необходимые для введения съедобных насекомых в ежедневный рацион. Отсутствие информации и недоступность продукта на европейских рынках делает проблематичным внедрение нового продукта для европейских потребителей. Недавно новое регулирование пищевых продуктов Европейского Союза (2021/2282) позволило легализовать некоторые виды насекомых на европейском рынке. Однако попрежнему существует ряд таких нерешенных проблем, как доступность и продовольственная безопасность при потреблении насекомых.
In the context of globalization, climate change, and population growth worldwide, European countries more than ever concentrated on creating more sustainable foodways. The issue on the agenda is to reduce the scale of livestock production but to provide the world with the same amount of proteins as traditional livestock provides. Among other alternative proteins, edible insects show more potential as a protein-rich food source for humanity. Historically, edible insects have been a traditional food in several countries. However, convincing Western countries where no insect consumption existed before - is a difficult task. Consumers in Western countries face a number of socio-cultural and psychological problems related to insects. Lately, with the advent need for alternative food sources, more researchers have become interested in entomophagy. They conduct researches and tasting sessions to understand consumer behavior in the regions, to find suitable methods required to introduce edible insects into the daily diet. The lack of information and inaccessibility of the product in European markets makes it problematic to introduce new products for European consumers. Recently, new novel food regulation of EU (2021/2282) permitted to legalize some insect species in the European market. However, there are still several unresolved problems such as the availability and food security of insect consumption.
