Il prodotto acqua: dalla sorgente alla distribuzione.

This work was inspired by an internship made between 2008 and 2009, at the mineral water bottling company "Fonte Azzurina" situated in Careggine (LU). This experience made me understand the mineral water bottling process in PET, its storage and its distribution, focusing on different aspects: The thesis is divided into five chapters and has the goal of describing the chain of water as a product: from the source to the consumer's table. The first chapter discusses the types of water intended for human consumption with reference to the national legislation governing this industry: mineral, drinking, spring and drinking reconstituted water. The second chapter deals with the production processes of the components of the primary, secondary and tertiary packaging: preform, cap, label, shrink and stretch wrap, handle and pallets. In the third chapter the basic specifications of the various formats are shown: still water 1.5l and 0.5l, slightly fizzy water 1.5l, sparkling water 1.5l and 0.5l. In the itemized lists we find all the components necessary to complete the bottles in various formats. The list includes the cost of a single component that takes into account the amount of component used. The fourth chapter describes the mineral water bottling process. This is the central process of the whole chain, and even the most critical, because the water must be taken from the environment and bottled as it is, without undergoing any kind of treatment, as required by law. Finally, the fifth chapter describes the needs of the large-scale retail distribution (Italian GDO) and the logistics of "Fonte Azzurrina".

Questo lavoro di tesi prende spunto da un'esperienza di tirocinio fatta nel corso del 2008 e 2009, presso l'azienda imbottigliatrice di Acqua Minerale ¿Fonte Azzurrina¿ di Careggine (LU). Questa esperienza ha permesso di conoscere il processo di imbottigliamento dell'acqua minerale nel PET, il suo stoccaggio e la sua distribuzione approfondendo diversi aspetti: La tesi è suddivisa in cinque capitoli ed ha come finalità quella di descrivere la filiera del prodotto acqua: dalla sorgente alla tavola del consumatore. Il primo capitolo parla delle tipologie di acque destinate al consumo umano facendo riferimento alla normativa nazionale che disciplina il settore: minerali, potabili, di sorgente e potabili ricostituite. Nel secondo capitolo vengono descritti i processi produttivi delle componenti degli imballaggi primario, secondario e terziario: preforma, tappo, etichetta, film termoretraibile ed estensibile, maniglia e pallet. Nel terzo capitolo sono riportate le distinte base dei vari formati: naturale 1.5l e 0.5l, leggermente frizzante 1.5l, frizzante 1.5l e 0.5l. Nelle distinte base sono elencati tutti i componenti necessari per la realizzazione delle bottiglie nei vari formati. Nell'elenco è compreso il costo della singola componente che tiene conto della quantità di componente utilizzata. Nel quarto capitolo viene descritto il processo di imbottigliamento dell'acqua minerale. Processo centrale di tutta la filiera ed anche il più critico perché l'acqua deve essere prelevata dall'ambiente ed imbottigliata tale e quale senza poter subire alcun tipo di trattamento, come previsto dalla legge. Infine nel quinto capitolo, vengono descritte le esigenze della Grande Distribuzione Organizzata (GDO) e la logistica della Fonte Azzurrina.
