Camellia sinensis (L.) Kuntze: tra scienza e leggenda

Camellia sinensis (L.) Kuntze is a shrub from the leaves of which is obtained one of the most appreciated and drunk beverages in the world, known by the generic name of "tea". This work develops as a journey through the history, rituals and legends that have surrounded this ancient drink for centuries. At the same time, the chemical components, botanical and agronomic properties, cultivation methods and processing techniques of C.sinensis leaves are analysed, explaining how different types of tea with different properties can be obtained from the same species.

Camellia sinensis (L.) Kuntze è un arbusto dalle cui foglie si ricava una delle bevande più apprezzate e bevute al mondo conosciuta con il nome generico di "tè". Questa tesi si sviluppa come un viaggio tra la storia, i rituali e le leggende che da secoli circondano questa antica bevanda. Allo stesso tempo vengono analizzate le componenti chimiche, le caratteristiche botaniche, agronomiche, i metodi di coltivazione e le tecniche di trasformazione delle foglie di C.sinensis che spiegano come da una sola specie si possono ricavare diversi tipi di tè con caratteristiche differenti.
